I don't know much in the way of capturing footage for Saturn games. I was just wondering what capture card should I get? Also is there additional cables I'll need to get?

EasyCap clones are an inexpensive way to capture composite or s-video, but I think the footage is recorded as 480i. Nonetheless, cheap.
For a quality recording that will cost significantly more, try looking into the Elgato series of devices. The Elgato Game Capture HD is the one that records in 240p I believe.

The "best way", would be to feed the Saturn's RGB into a high quality upscaler. Like the Framemeister or OSSC (framemeister's HDMI should be compatible with everything. OSSC might require some additional goodies like a DVDO device to normalize the signal for capture) Then take that HDMI signal and plug it into a good capture card, like the above mentioned Elgato or something else.

Still using my same old method, I have a Bush HDD/DVD recorder that has an RGB SCART input, record footage to a DVDRW then dump the video files straight in to Premiere.

I have an EzCap116, which is fine but not amazing. You need to get splitters though (and maybe extra cables too but I don't remember. I don't think you have to get those). It's cheap enough though. Looking at it, I think it is likely that you will need splitters and extra cables. You can pick them up easily at a place like Maplins or Amazon or wherever. They're cheap and easy to find.
I'm not certain though, but I needed it for my EZ cap

OK, I've just purchased an Elgato, but know I'll need additional cables. Can someone please link me to the product in question on Ebay or Amazon so I'm under no illusion as to what I need to obtain?

An Elgato comes with two cables as seen in the following link. I don't have any additional cables that I would likely need.

Looks like it needs and HDMI cable and a mini-USB to USB cable on the HD60 - if you're planning on springing for the S model it's a USB C port instead of USB mini. Check here to compare models.

I use an older elgato game capture HD. Recording at 720p allows footage to be captured at 60fps. 540p and under it records @ 30fps. the elgato game capture HD allows direct connection to TV so you can play and watch from there. the pc/laptop will lag about a second behind when recording. Had to purchase a separate s-video connection a year ago. Saturn s-video capture now I use RGB / OSSC / HDMI to gamecapture. When recording with OSSC it might be best to turn off the scaliness or reduce it as much as possible as it looks uneven through game capture, especially when the YT vids get scaled down for forum embedding. RGB / OSSC (using the newer lighter scanline mode) / HDMI and edited in DaVinci
