Darius Gaiden, In the Hunt, Blast Wind are three of my favourite more relaxed shooters. All can be 1CC fairly quickly with a bit of practice.
Technically I don't think there are many bullet hell shooters of Saturn, just the Cave, Psikyo games, Batsugun and Battle Garegga.
Even Radiant Silvergun isn't a bullet hell as such and one of my all time fav shooters, but some would debate if it's a bullet hell or not, I suspect.
