I have confirmed that Girls in Motion vol.1, in addition to volume 2, has mouse compatibility. (I've actually known this for quite a while but forgot to post it here!)

I think I'll try and pick up a mouse for Z, although it's shameful that Command & Conquer doesn't work with the mouse. Does anyone know if The Horde can use mouse?

I just tried Virtua Cop 1 and 2 (Japan) and they do work with the white Japanese mouse. There is even a picture of the mouse in-game when you go to options and configure controls. US version of Virtua Cop also works. House of the Dead does not work, unfortunately. I had no idea the VC games were mouse compatible. This is good news for me since I play on an LCD tv and the lightguns don't work. BETTER THAN A PAD... but still no match for an actual gun I'm guessing the mouse works with all those pre-rendered button pressing/puzzle solving titles (i.e. Myst, FOAtlantis, Frankenstein etc)?

I have tried out Angel Paradise Vol. 2 and confirmed that, against all logical reason, it does NOT support the mouse. I assume the same is true of Angel Paradise Vol. 1, but I don't have a copy of the game to check.

Command and Conquer has to be like the only RTS game that actually controls decent with a controller. I wonder if they could've gotten it to work in hi-res, though?
One of those awful lightgun games, either Area 51 or Crypt Killer also worked with a mouse. If I remembered that regex query I used to parse Madroms software list, I could post a full list of mouse-supporting games (that ones that are marked in the header, anyway).

Just landed myself a copy of Iron Storm (released in Japan as World Advanced Daisenryaku: Kotetsu no Ikusakaze) and it was while flipping through the manual that I encountered the pleasant surprise that it supports the Saturn mouse.
So I tried it out... **Sigh** The game is well-suited to mouse control, but it's obvious that the developers just translated the standard controller inputs into mouse inputs. This means that, for instance, you select units and options by right-clicking. A lot of menus don't have mouse cursors, so you have the awkward deal where you roll the mouse once to produce the same effect as pressing the D-pad in that direction. And so on. Makes you wonder why they bothered with mouse compatibility at all.

But maybe it was hard to translate properly to the mouse? Maybe they gave it such limited supported because they knew they had to but also knew that not many people owned a mouse for the Saturn?

Well, it's not Working Designs's doing, since they're just a localization team. Actually, I just checked the Working Designs manual, and it not only notes that you can change the default button configuration for the mouse (so there's one problem with the game's mouse support solved), it actually specifically recommends that you swap the A and C buttons. So apparently Working Designs realized the developers hadn't been too smart with the mouse implementation and lacked the means to fix it.
