You will need to get component out of the saturn, s-video or composite upscaled onto a screen like that will look awful!

Yeah I will definitely be using component. Just found this too which I think will probably do a better job without getting into "silly money" range: www.cyberselect.co.uk/product/1487

I've just bought a LCD TV (to replace my broken cathodic TV) and plugged in my modded Saturn with just a scart. The image is fantastic!!!
I'm really happy with the "old school look", I obtain. You can see all the pixels, it's so great!!!
I've tried with my Megadrive but the look is not as great, 'though.
By the way... I didn't know there were component link for Saturn?! Where can we find such link?

From my understanding, component is just compressed RGB. So if it outputs RGB, component should always be possible with a good mod job. But since you're using RGB scart anyways, don't bother with component.

OK that's what I thought but as I don't speak english so well and as it was technical words, I wasn't so sure! Is it just me or do you also find those prices for upscalers/transcoders totally insane?

I don't think the price is too bad to be honest. They should produce a far better picture than the cheapo scalers built in to most LCD TVs these days.
However I want to connect to a monitor rather than a TV, which has no internal scaler (well, at least not for lowly TV formats like PAL and NTSC). Now, I also have a surround sound amp in this setup and it does do a bit of upscaling. Unfortunately though, this only seems to work with games that us the Saturn's hi res mode, like Virtua Fighter 2.
