Got a year old Panasonic Viera Plasma here too and believe me the Saturn picture quality can be a LOT better than just sticking to the SCART (except on interlace games possibly), but if you're happy there's no need to throw money at it like I did. I figure if you're spending a grand or more on a set though, seems silly to settle for inferior picture on any source but I understand I am a bit of a perfectionist.
Input lag on the Panasonic Plasmas is around 30 to 40ms, add deinterlacing to that though and it goes up to over 60ms, making shooters a lot less playable but depends on the individual level of tolerance. Once you get around the 90 to 100ms mark most people can notice. Best to keep it under 40ms for shooters. Some sets have lag around 60ms even in gamer mode, add deinterlacing to that too and you're in for a pretty unplayable game.
Best VGA to DVI converter I ever used was the Gefen VGA to DVI scaler plus. If you're lucky you can pick these up on Ebay for under £100. Not only is it lag-free, the scaling is pretty good too, though probably not that much better than your TV can typically do.
Of course there's things like the DVDO Edge and the XRGB3 but then you're getting into serious money.
