If you had to pick one which would you recommend? I've got the Capcom fighter bug at the moment, but the only one I have for the Saturn is SF Zero, and I'd prefer a 'versus' title anyway.

MSh vs SF is the better game but the roster irritates me too much to the point where I do prefer X-Men vs SF over it. So my vote goes to X-Men vs Streetfighter

MSH vs SF is newer, in my opinion more polished, it has an assistance system introduced for the first time in the series, so this may be a better game in terms of completeness. However, like sych said, X-men vs SF has better roster of characters, that's why i prefer that one. I think both games are a must have in saturn collection

I only own Xmen Vs Street Fighter. Had a chance to pick up Marvel Vs Xmen for a decent price and passed it up. As most have have said the roster on Marvel Vs SF is underwhelming to say the least. I had no interest in any of the characters... outside of Spiderman really.

I'm a huge X-Men fan, so my vote goes to X-Men vs SF. It has a much better character roster.
I used to spend so much playing this in the arcades. Once I got a blood nose during a match but was so absorbed in the game I let it bleed down my school shirt while I continued playing.
