Voted Daytona USA. Always fun, such a great atmosphere. Harder than it looks.
Haven't played CE yet but it's waiting on the shelf, perhaps that's even better.
Wish I could say Wipeout 2097. Looks gorgeous but I find it just too difficult to be enjoyable for any length of time.

Definitely original Daytona. I haven't cared for CCE at all, not just because of the controls but because they made the pit crew guy even more annoying.
I don't have any of the others on this list, so my runner up would be Cyber Speedway. Sure, it's a bit weird, but I enjoyed it.

I'm going with Daytona USA too. I've beaten all tracks on all difficulties on that and CCE. They are both solid games but I'm going with USA based on the time I've put into it as well as the nostalgia factor of buying it at launch. I haven't put enough time into CE to have a credible opinion on it. I think that beating it will be my next goal.

Daytona Circuit Edition, playing it with the steering wheel, while in the cockpit view is a lot of fun.

I've just played Time Warner Interactive's Virtua Racing conversion. As a port, it's disapointing, but as a game in it's own right it's actually really fun.
I chose Daytona Circuit Edition because of the three Saturn Daytona's, it's the one I had the most fun with. Need for Speed and Wipeout 2097 deserve a mention too.

ANYWAY...
A list of racing games I really like on the Saturn AFTER SEGA Rally are - alphabetically:
Daytona USA, CCE & CE (I enjoy them all differently!) Need for Speed Scorcher WipEout 2097
Also, to a lesser extent: F1 Challenge (plays REALLY well, but lacks a career/proper arcade mode i.e. no depth) GT24 (collision detection ruins what could have been a decent racer!) Impact Racing (cheesy!) King the Spirits (just a bit rough around the edges but fun)

Other.
Scorcher. Easily, easily, Scorcher. It had excellent graphics, a great art style, dope music, and moderate difficulty. It reminds me of Sonic Generations a little since you have to collect orbs to power up your jump and turbo mechanic. It's basically a racer/platformer in many respects.
Street Racer deserves a mention. I think it's the only cart racer on Saturn. Gorgeous graphics, fun gameplay, and it runs at a smooth 60fps.

Scorcher is WAY up there for me too. However, I always hit these topics with a 'Desert Island/ Prison' mentality where you will only have (in this instance) SEGA Rally and and another racer to play, indefinitely. On that basis I always gravitate to the other game I would most like to play, exclusively, long-term. As much as I ADORE Scorcher and it's right up there for me, it wouldn't be my 2nd Desert Island/Prison title It's an amazing game though and horribly underrated/overlooked. I tried to get PPL into it back in one of our Community Playthroughs *gulp* years ago, however, most PPL just found the difficulty of the game too steep. Shame because, when you 'crack' it, it's such a great, rewarding racing game. Takes some practice though...

I voted NFS, sad they didn't port the second one (the best) on saturn. Anyon tested Power Drift? the port seems good but I don't know if it is fun (which means are controls OK?)

It's a tough one but I'm going with Daytona USA Circuit Edition, followed by Wipeout 2097 and then High Velocity Mountain Race Challenge. If F1 challenge had more options it may have snagged my vote.

My vote ultimately went to Daytona USA Circuit Edition, though I feel WipEout 2097, Sega Touring Car and Sonic R all deserve a mention, too.
